Try this baked olive oil and balsamic carrot
recipe. There is just a sprinkling of olive oil
so these low-fat cooked carrots are an
excellent alternative to deep-fried potatoes as a
dinner side dish.
If you don't regularly serve low-fat cooked carrots
at the dinner table, you should. Carrots are
anything but ordinary when it comes to nutrition.
Carrot provide the body with essential enzymes,
vitamins and minerals and are exceptionally high in
beta-carotene. Research shows that carrots have an
anti-cancer effect and also helps prevent heart
disease.
1 1/2 lbs. carrots
2 Tbsp. extra virgin olive oil
1 Tbsp. Balsamic vinegar
1/2 tsp. sea salt
Preheat oven to 375 degrees. Line a shallow pan with
foil. Cut off the tip and end of each carrot. Next, cut
the carrots in half cross-wise, then cut
length-wise, and cut length-wise again to produce
fry-sized pieces of carrot sticks.
In a bowl, lightly coat carrots with olive oil and
balsamic vinegar.
Arrange cut side down in a single layer on a baking
sheet and sprinkle generously with salt. Bake at 375
degrees for 30 minutes, or until carrots are golden
brown. Serve hot or at room temperature.
