Baked Olive Oil and Balsamic Carrot Recipe.

1 1/2 lbs. carrots
2 Tbsp. extra virgin olive oil
1 Tbsp. Balsamic vinegar
1/2 tsp. sea salt


Preheat oven to 375 degrees. Line a shallow pan with foil. Cut off the tip and end of each carrot. Next, cut the carrots in half cross-wise, then cut length-wise, and cut length-wise again to produce fry-sized pieces of carrot sticks.

In a bowl, lightly coat carrots with olive oil and balsamic vinegar. Arrange cut side down in a single layer on a baking sheet and sprinkle generously with salt. Bake at 375 degrees for 30 minutes, or until carrots are golden brown. Serve hot or at room temperature.

Makes 4 servings.
