Maple-Roasted Butternut Squash Recipe.
Butternut squash is a sweet and nutty tasting winter squash variety with
a pale brown-orange skin and a deep, orange flesh. This complex carbohydrate is
a source of vitamins C, A and B6, potassium, magnesium, iron, calcium, zinc and
has a high amount of beta-carotene. This vibrant orange vegetable, along with
the other orange vegetables pumpkins, butternut squash, carrots and sweet
potatoes, contain high levels of antioxidant-rich carotenoids that help prevent
cancer by repairing the DNA. The orange vegetables are especially good for
eyesight and help with night vision. The orange vegetables also help our bodies
get the vitamin A we need.
Maple-Roasted Butternut Squash Recipe
1 large butternut squash, quartered and seeded
1/2 cup pure maple syrup
Pre-heat broiler to High. Microwave the squash for
10 minutes. Remove squash from the microwave and brush with maple syrup. Place
the maple-coated squash under the broiler for 2 minutes, or until golden brown.
Serve Warm.
