2 pounds carrots, peeled and grated
1 large onion, chopped
2 cloves garlic
4 cups vegetable or chicken stock
4 Tbsp. butter
1/2 teaspoon dried thyme
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
In a medium stockpot, lightly sautee onion and garlic in butter
until tender. Add stock, seasoning and carrots and simmer about
15 minutes. Allow soup to cool and put through blender in
batches. Reheat soup over low heat. Serve warm.
